Rolled Biscuits

Buttermilk Biscuits

Hot, fresh biscuits go well with everything from omelets to fried chicken. And it is hard to beat them slathered with butter and homemade jam. When someone serves homemade biscuits, it almost makes me feel like part of the family.

Buttermilk Biscuit Ingredients

1 ¾ c. sifted all-purpose flour
½ tsp. salt
2 tsp. baking powder
½ tsp. baking soda
1 tsp. sugar
5 tbsp. butter
¾ c. buttermilk
additional butter, melted

Preheat the oven to 450 degrees.

Re-sift the flour together with the other dry ingredients.  Cut in the butter using either two knives or a pastry cutter.  Add buttermilk and lightly mix the dough.  Turn the dough out onto a floured board.  Knead it for ½ minute.  Pat the dough to ¼ inch thick.  Cut it with a biscuit cutter or the rim or a drinking glass.  Brush the tops of the biscuits with the melted butter.

Bake 10 – 12 minutes. Serve immediately.
