Pineapple Glazed Ham

 

I like the way the pineapple in this recipe gives the ham a slightly tropical feel. Don't skip the Dijon. It cuts the sweetness of the glaze.

3/4 c. firmly packed brown sugar
3/4 c. maple syrup
¼ c. Dijon mustard
1 bone-in ham, 10-12 pounds
1 (20 oz.) can pineapple rings, juice reserved

Preheat the over to 350 degrees. Mix the sugar, maple syrup, pineapple juice and mustard until well blended.  Set aside.  Score the ham then attach the pineapple rings to the ham's surface with toothpicks.  Place the ham in a baking pan and pour the brown sugar mixture over it.  Bake 4 to 5 hours, until the ham reaches an internal temperature of 140 degrees, basting occasionally.
