Kid Friendly Mini-Quiches

Quiche may be a new experience for many of the children attending your party. Don't make it any harder by adding visible vegetables. Use cheeses that are going to give the eggs a layer of familiar flavor.

1 recipe pie dough, at room temperature
2 tbsp. olive oil
2 medium shallots, minced
1/2 lb. ham, cut into 1/8-inch cubes
1 ½ c. Cheddar cheese, grated
Freshly ground pepper
1/2 c. milk
1/2 c. heavy cream
3 large eggs

Preheat oven to 350°

Form pie dough into 24 balls. Press a ball into the bottom and sides of each cup of a mini-tart pan. Transfer the pan to the freezer to chill for while making filling.

Place tart pan on a baking sheet to catch any overflowing filling. Heat oil in a large nonstick skillet over medium high heat. Add shallots and ham, and cook, stirring, until the shallots turn translucent, about 1 minute. Evenly divide the cheese into the bottom of each muffin cup. Top with ham and shallot mixture. In a medium bowl, whisk together milk, cream, eggs, and pepper. Pour even amounts into each mini-quiche. Bake 30-35 minutes, until center is set.

Cool on a wire rack for about 10 minutes before unmolding the quiches. Serve hot.
