Sand Dollar Cookies

These are fairly basic sugar cookies cut to look like sand dollars. They look pretty close to the real things. If you want, you can cut them using a special sand-dollar shaped cookie cutter. Or, if you prefer, you can use royal icing to paint sand dollars onto round cookies. Several designs can be seen below right.

5 c. all-purpose flour
1 ½ tsp. baking powder
1 tsp. salt
2 c. sugar
1 1/4 c. canola oil
1 c. butter
3 eggs
1 tsp. vanilla
additional sugar, for rolling

Sift together flour, baking powder salt and sugar in a large bowl. Combine the eggs, oil, butter and vanilla in a small bow and beat well. Add the flour mixture to the sugar mixture and beat until well incorporated. Cover bowl with plastic wrap and chill dough for two hours, or overnight.

Preheat oven to 375 degrees. Roll out the dough and cut it into rounds using the floured top of a drinking glass. Poke five holes in each cookie using a butter knife. Use scraps of dough to fashion five small ovals, and place these atop the cookie to resemble a real sand dollar.

Bake 8-10 minutes, then remove from oven. Let cool on the pan for 1 minute, then dredge the tops of cookies in sugar. Place the cookies to wire racks to cool completely.
